Its all about the Curry. Yah.

Curry is a spice that has its origins rooted in India, but has really become used in dishes worldwide. This spice that traditionally is made up of coriander, cumin, and turmeric and is mixed together to be used as a sauce or dry rub. Sauces are made up of spices, herbs, peppers along with yoghurt, cream, coconut milk, coconut cream, legume purée. This is then usually applied to various types of fish, meat, poultry, or shellfish and vegetables. Dry curries are mixed with a little broth and then it’s cooked off to create a paste coats your ingredients.

Curry powder is normally purchased already premixed with the blend of spices. This is nice because it saves quite a bit of time and you have plenty of varieties to choose from. If you decide to mix your own below is a tried and true method.

Curry Powders / Dry Rubs

Indian Curry Powder Blend
Ingredients:
  • 2 tablespoons cumin
  • 2 tablespoons cardamom
  • 2 tablespoons coriander
  • 1/4 cup ground turmeric
  • 1 tablespoon dry mustard
  • 1 teaspoon cayenne

    Simple Thai Red Curry Sauce - Restaurant Style
    Ingredients:
  • 4oz Maesri red curry paste (Or any premixed red curry paste)
  • 13.5 fl oz Coconut milk (lite or regular)
  • 1 Tbsp minced ginger
  • 1 Tbsp minced garlic
  • 1 small chopped yellow onion
  • (Optional) 1 Tbsp of curry powder
  • Salt and pepper
  • Olive oil for cooking
