Almond crusted baked eggplant

A very different way to bake eggplant. It is totally vegan.



  1. beat vigorously the first seven ingredients to make an emulsion.
  2. Dip eggplant slices in oil mixture. Let oil drip off.
  3. Then dip into almond flour and place on heavy cookie pan. Drizzel eggplant with  a little leftover oil or extra oil.
  4. Bake at 450 degrees for 15 minutes.  Then turn over and bake another 15 minutes.
  5. Serve with your favorite marinara sauce.
